Summer squash is high in vitamin C and low in calories and can be a savory or sweet addition to your summer menu. Zucchinis add great flavor and nutrients to soups, can be roasted or sauté for side dishes, they are a perfect vegetable to grill in a barbecue and they can even be made into sweet zucchini bread for dessert. Choose zucchinis that have shiny peels with few bruises and are heavy for their size. Store them unwashed in an air-tight container in the fridge for up to seven days.
