1 tbsp oil
1 onion, diced
8 oz cremini mushrooms, sliced
1 block firm tofu, diced
2 tsp cumin powder
1 tsp chili powder
1 tsp jarred minced garlic
28 oz can diced tomatoes
6 oz can tomato paste
15 oz can black beans, drained and rinsed
15 oz can kidney beans, drained and rinsed
1 cup frozen corn
2 tbsp cocoa powder
Whole-grain tortilla chips, to serve
Salt and pepper, to taste
Heat oil in a large saucepan over medium heat. Add onion and mushrooms. Cook for 4 minutes.
Stir in tofu, cumin powder, chili powder, garlic, and salt and pepper to taste. Cook for 3 minutes.
Add diced tomatoes, tomato paste, black beans, kidney beans, corn, and cocoa powder. Simmer for 30 minutes.
Serve with crumbled tortilla chips on top.
