Kwame Onwauchi’s Caribbean Chicken Soup: Recipe from the God’s Love 2024 Holiday Catalog

Caribbean chicken soup for Jamaicans is what warm apple pie is to Americans.
It feeds the soul and nourishes the spirit. It’s also incredibly delicious and is a simple recipe that should be in every cook’s arsenal.

Kwame Onwauchi’s Caribbean Chicken Soup

Serves 6-8

INGREDIENTS
1 whole chicken cut into 8 pieces
2 tbsp Creole Seasoning, plus more to taste
Kosher salt to taste
2 tbsp canola oil
2 medium yellow onions, diced
10 cloves garlic, minced
1 green bell pepper, diced
2 tbsp tomato paste
1 chayote squash, cut into ½-inch dice
2 cups (about ¾ pound) ½-inch cubes peeled, seeded pumpkin or other hard winter squash
1 packet Grace “Cock” chicken soup mix
2 large Yukon gold potatoes (about 1 pound total), peeled and cut into ½-inch cubes
2 ears corn, each cut into 6 rounds
2 bunches scallions, sliced
4 (1-inch) knobs ginger, peeled
12 allspice berries
1 red Scotch bonnet
4 fresh bay leaves
10 sprigs thyme
6 quarts chicken stock
Flaky sea salt, for finishing

METHOD
1. Season the chicken generously with House Spice and salt. Let marinate at room temperature for 20 minutes.

2. Heat canola oil in a Dutch oven or stock pot over medium-high heat. When it shimmers, add the chicken and sear until golden-brown on both sides,  bout 4 minutes per side. Remove chicken to a bowl and set aside.

3. Reduce heat to medium and add onion, garlic, and bell pepper. Sauté until onion is beginning to turn translucent, 5 to 7 minutes, then add the tomato paste and cook, stirring often, 5 minutes more, until brick-red. Add 1 tbsp of House Spice, the chicken, and the remaining ingredients to the pot, stirring well to combine. Bring to a boil, then reduce to a gentle simmer.

4. Simmer uncovered for 40 minutes.

5. Carefully remove the ginger, allspice berries, Scotch bonnet, bay leaves, and thyme sprigs. Taste and adjust seasoning, then serve.
